    The photo of brides and grooms sharing their first slice of cake is one of the most memorable and sometime humorous photos reviewed by couples long after their wedding day.  After twenty years of passionately creating cakes, I know that few brides want just an ordinary wedding cake. Some ways your cake can be a unique reflection of your style are edible pearls, lace that matches your gown, a bow similar to the one on your dress, a monogram, some motif on your invitation, or a replica of the flowers in the wedding. 
     Skilled cake makers in England began using their culinary skills to create realistic, flowers out of sugar.  After many years of refining this art form, there are a minority of bakers who can create flowers that are as realistic as those found in my garden.  My specialty is creating over 200 varieties of sugar flowers.  Sugar flowers are not edible. They are so true to life that brides keep these arrangements under glass domes in their homes as a daily reminder of their wedding day ~ even when that day was twenty years or more prior.
     When it comes to creating a wedding cake that meets each bride’s expectations, I have found that the results are outstanding when I sit down with each bride in the quiet of my studio and discuss what it is she wants for her cake.  It gets to be fun when the bride works with me to come up with the Groom’s Cake.  This cake is usually chocolate or a flavor the groom likes.  The groom is pleasantly surprised to see that his bride thought enough of him to create a cake that is so personalized. Sometimes brides ask if they can bring their mother, a best friend, or a favorite aunt to the consultation.  Everyone is welcome to join brides at my open houses where I showcase my cakes and offer samples.  But, when it comes to creating “the bride’s wedding cake” I recommend each bride remember this is “her wedding” and she should make the decision.  If the bride still wants to bring her mother, sister or best friend, then they will be welcomed.  
     Saving the top tier for the first anniversary is a tradition newlywed couples continue to celebrate.  Many couples ask me to prepare a spice fruitcake for the top layer of their wedding cake because they are more flavorful twelve months after the wedding.  I use one of the recipes from an official wedding cake of the Royal family.  Some couples will cut the top tier and order a cake for their anniversary.
