Some traditional nationality wedding looking cakes can be made as well. For example, a traditional Irish wedding cake may include the the Irish love symbol, Claddagh (pronounced CLAW-DA, representing love, loyalty and friendship symbolized with a heart, crown and hands. Celtic knots, shamrocks or a horseshoe symbolizing good luck can be incorporated into the design as well. Or an Irish symbol may be used for an Irish groom for a groom’s cake. Another symbol, The Luckenbooth, a Scottish symbol of love which has two intertwined hearts with a crown can be incorporated into the wedding cake design. Karin can make an edible wooden Welsh lovespoon that represents many aspects of love, engagement and an acceptance of a marriage proposal. A traditional Scandinavian wedding cake is the Kransekage, up to 18 layers of an almond macaroon consistency type cookie that looks like a tower and decorated with sugar items and drizzled with icing and edible glitter or powdered sugar. Croquembouche is a traditional French wedding cake made with cream puffs and drizzled with caramelized sugar. The Fleur de lis symbol is used on many wedding cakes in New Orleans or on wedding cakes with brides or grooms with French heritage.
